Skillet Lasagna

Averi loves to eat. This was the night I made skillet Lasagna. It is a family favorite, everyone gobbles it up! It is super easy to make so I thought I’d share the recipe. I am always looking for new, fun recipes that my kids love and I found this one on a great recipe blog. I have a number of recipe blogs in my Google reader, when a recipe comes through that I like I email it to myself. I have a recipe folder set up in outlook and it is really easy to search the folder for what I am looking for. I also keep my dinner calendar as one of my outlook calendars.  It is so much easier than the old paper calendars I used to make each month.  It really has helped me be better organized with my cooking and to remember recipes that my family loved.DSC_0104

Skillet Lasagna

1 pound ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 cups diced tomatoes, undrained
1 1/4 cups water
1 8-ounce can tomato sauce
1 tablespoon dried parsley flakes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
2 1/2 cups bow tie pasta, uncooked
1 cup cottage cheese
1/4 cup grated Parmesan cheese
Dash basil, pepper
In large skillet, brown beef with onions and garlic; drain. Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt. Mix well. Stir in uncooked pasta. Bring to a boil, stirring occasionally. Reduce heat; cover, simmer for 20 minutes or until pasta is tender, stirring once. Stir in cottage cheese. Cover with and Parmesan cheese, and sprinkle in basil and pepper to taste if desired. Cover and cook for 5 minutes.
My Tips:
* I use the mini bow tie pasta, easier for the kids to eat and just cute! It cooks a little faster too!

* I add a 15 oz. can of tomato sauce because that is what I have in my cupboard

*I just use a tablespoon or two of Italian seasoning instead of the basil, parsley and oregano

*I strain the cottage cheese before adding it, put it in a colander and run cold water over it

Sounds so yummy! I think I will try it with gluten free bow tie pasta! Thanks for the recipe! Cute pictures of sweet Averi as always, won't be long before she turns 1...WOW!
